Cranberry Apple Kale Salad with Lemon Vinaigrette

Ingredients
Salad

baby kale
1/3
cup
dried cranberries

sweet apple
chopped (gala or fuji work well)
Lemon Vinaigrette
1/4
cup
olive oil

tablespoons
lemon juice
2
tablespoons
honey
1
teaspoon
Dijon mustard
salt
and pepper to taste
Instructions
Toss kale, apple and cranberries in a large bowl. Whisk together vinaigrette ingredients. Toss the salad with vinaigrette to combine.
