Zucchini Chocolate Chip Cookies Recipe

Ingredients

  • ¾ cup coconut oil
  • 1 cup Rapadura or raw sugar
  • 1 egg
  • 1 tea vanilla
  • 2 ½ cups flour
  • 2 teaspoons baking powder
  • ½ sea salt
  • 1 tea cinnamon
  • 1 ½ cups grated zucchini
  • 1 cup chocolate or carob chips

Instructions

  • Preheat oven to 350*F.
  • Cream together coconut oil, sugar, egg and vanilla.
  • In a separate bowl, combine the flour, baking powder, sea salt and cinnamon. Add this to the creamed mixture.
  • Add zucchini and chocolate or carob chips.
  • Drop from a teaspoon onto an ungreased baking sheet. Bake for about 15 minutes or until golden on top.
